Ingredients
2 lb boneless skinless chicken breasts
1/2 cup sliced almonds
2/3 cup EIEIO'S GARLIC AIOLI
1 tablespoon dijon mustard
1 cup red grapes (quartered)
1/2 cup chopped celery
Salt to taste
and we really dig a tsp of tarragon
Boil up chicken in enough water to just cover the meat..(and freeze the broth for some other recipe). You can speed this up using an already roasted chicken from the store. Chop chicken into bite size pieces in a big bowl. Add all the other ingredients and have at it!!
