Pesto Rolled Skirt Steak

They call these “pinwheels” at the grocery store but our version is light years beyond theirs’!

Ingredients

  • 2 lbs of skirt steak

  • half jar EIEIO Cilantro Pecan Pesto

  • Your favorite goat cheese or Feta crumbles

  • olive oil & string

Directions

  • Roll out flank steak into long strip
  • spread EIEIO Pesto across then sprinkle w/Feta or Goat Cheese
  • Roll entire flank steak up, wrap w/string every 3 inches and slice into inch & a half portions
  • Bake or carefully grill for 25-30 minutes checking to see when medium rare and ready to devour!!
