They call these “pinwheels” at the grocery store but our version is light years beyond theirs’!
2 lbs of skirt steak
half jar EIEIO Cilantro Pecan Pesto
Your favorite goat cheese or Feta crumbles
olive oil & string
- Roll out flank steak into long strip
- spread EIEIO Pesto across then sprinkle w/Feta or Goat Cheese
- Roll entire flank steak up, wrap w/string every 3 inches and slice into inch & a half portions
- Bake or carefully grill for 25-30 minutes checking to see when medium rare and ready to devour!!
